- 2 1/2 cups Vegetable broth

Thoroughly rinse the brown rice:
One thing you need to keep in mind is that always rinse your brown rice and quinoa in cold water. People also recommend going for normal tap water, but that's an alternative, so it's better to go for cold water for fresh rice. Also, rinse once more until the water is clear. By doing this, it helps in removing any extra starch from the grains.
Heat olive oil:
Now once your rice is cleaned and soaked in water, let's move to the main step. Take a large saucepan or any pot for cooking and add oil as per your liking or, as mentioned above, with medium heat on the stove. Wait for a minute or two till it gets heated.
Time to saute:
The hot pot should now include the minced garlic and onion. Here you must cook for two to three minutes, stirring now and then, until the onion is transparent and fragrant. After that, zucchini, red bell pepper, and sliced mushrooms should all be added to the saucepan. Continuing to cook the vegetables for an additional 5 minutes while stirring occasionally will cause them to soften, and that's what we want to achieve.
Add brown rice in it & seasoning:
Give it a good boil:
Bring the mixture to a boil by turning up the heat to high. Turn down the heat to low once it boils. For around 30 to 40 minutes, cover the saucepan with a lid and let it simmer. As the rice and quinoa soak the liquid, they will become delicate throughout this period. Stir often to avoid sticking; if necessary, add a bit more water or broth to keep the appropriate consistency.
Once you've tasted the quinoa and brown rice mixture, season it to your liking. If necessary, increase the amount of salt, pepper, or herbs. Transfer the quinoa and brown rice mixture to a serving bowl. It can be used as a basis for other dishes or as a savoury side dish.
