Preheat the oven to 450°F.
Cut potatoes into ¼ – ½-inch strips. Toss with oil and 2 tablespoons ranch seasoning in a large bowl. Transfer to a baking sheet without overlapping.
Cook for 15 minutes, flip the fries, and cook for 10 minutes. Sprinkle with remaining ranch seasoning.
While fries cook, melt butter in a saucepan over low heat. Whisk in flour, and slowly drizzle in beer while whisking.
Add wing sauce, broth, salt, and pepper. Simmer, then reduce heat. Taste and adjust seasoning.
Heat chicken in the microwave for 1-2 minutes just before the fries finish.
Assemble poutine on 4 plates: fries, ½ cup cheese, ½ cup chicken, and ⅓ cup beer sauce. Allow 30 seconds for the hot fries and sauce to melt the cheese.
