Ingredients

  • 1 package  Ranch salad dressing seasoning mix
  • 3 medium Russet potatoes
  • 4 tablespoon  Butter
  • 3 tablespoon Flour
  • 3 tablespoon Vegetable oil
  • 1/2 cup Beer
  • 1/2 cup  Buffalo wing sauce
  • 1 cup Chicken broth
  • 2 cups Cooked chicken (shredded)
  • 2 cups  Mozzarella cheese (shredded)
  • ¼ teaspoon  Black pepper
  • 1/4 teaspoon Salt

Instructions

  • Preheat the oven to 450°F.
  • Cut potatoes into ¼ – ½-inch strips. Toss with oil and 2 tablespoons ranch seasoning in a large bowl. Transfer to a baking sheet without overlapping.
  • Cook for 15 minutes, flip the fries, and cook for 10 minutes. Sprinkle with remaining ranch seasoning.
  • While fries cook, melt butter in a saucepan over low heat. Whisk in flour, and slowly drizzle in beer while whisking.
  • Add wing sauce, broth, salt, and pepper. Simmer, then reduce heat. Taste and adjust seasoning.
  • Heat chicken in the microwave for 1-2 minutes just before the fries finish.
  • Assemble poutine on 4 plates: fries, ½ cup cheese, ½ cup chicken, and ⅓ cup beer sauce. Allow 30 seconds for the hot fries and sauce to melt the cheese.

Notes

  • Use fresh cheese for that squeaky bite.
  • Make sure your fries are crispy before serving.
