For Tea:
- 6 tbsp Loose leaf black tea (or 12 grams)
- 7-8 cups Water
- Raw sugar to taste (coarsely ground)
For Cheese Foam:
- 1 tsp Kosher Salt
- 2 tbsp Full-fat cream cheese
- 2 tbsp Granulated sugar
- 6 tbsp Whole milk (approximately 3 oz or 90 ml)
- 8 oz Heavy cream (1 cup)
For Tapioca Pearls:
- 200 g Raw sugar (1 cup, coarsely ground)
- 1 cup Black tapioca pearls, dried
- 6-7 cups Water
For Tea:
Take a large saucepan and add 7 cups of water to it.
Place the saucepan on high flame and boil the water.
When the water is boiled, take off the saucepan from the stove. Add the loose-leaf black tea to the boiling water. Cover the saucepan.
Keep the saucepan unbothered for a few minutes until it changes its colour to amber-red because of the tea.
Strain the tea in a pitcher. Then add coarse raw sugar in it and stir well to mix the sugar.
Let the tea cool down to room temperature. Then cover the pitcher and place it in the refrigerator.
For Cheese Foam:
Take a small bowl and add cream cheese and milk to it. blend them well so that no lumps of cream cheese are present.
Place the saucepan on high flame and boil the water.
Take a separate medium-sized bowl and add granulated sugar, cream, and diamond crystal kosher salt. Beat them using an electric or manual beater so that the sugar is completely dissolved and the mixture has turned frothy.
Combine the two mixtures and again beat them to mix. The level of doneness is when the mixture has an airy and light, sea foam-like consistency, but should be hardly able to flow.
For Tapioca Pearls:
Take a saucepan and add 6 cups of water to it.
Boil the water on a high heat.
Then add the tapioca pearls and keep stirring so that all the pearls are cooked and start to float. Their colour should be utterly brown by this point.
Take them away from the stove, cover the saucepan, and let them aside undisturbed for half an hour.
Take another pot and cook 1 cup of raw sugar and water so that the sugar completely dissolves.
Then drain the water from tapioca pearls using a mesh and add them to the syrup. Cover the container.
