Jamaican Bread Pudding Recipe

Ingredients
  

  • 10 slices  Bread Day old (any assortment)
  • 2 tablespoon Butter (melted)
  • 1/3 cup  Raisins
  • Eggs (beaten)
  • 1 +1/4 cups  Whole Milk
  • 1 cup  Evaporated Milk or Cream
  • 1/4 cup + 2 tablespoon White Sugar
  • 1/4 cup  Brown Sugar
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Nutmeg grated
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon + 1 teaspoon White Rum or Rum of choice
  • 6-8  Maraschino Cherries cut in quarters

Instructions
 

  • Soak raisins in rum for at least 30 minutes.
  • Preheat the oven to 350°F and grease an 8"x2" pan.
  • Cut bread into 1" cubes and put them in the pan.
  • Melt butter in the microwave and drizzle it evenly over the bread. If using, add raisins.
  • In a medium mixing bowl, combine eggs, milk, cream (or evaporated milk), sugar, cinnamon, nutmeg, rum, and vanilla. Mix well.
  • Pour the egg mixture evenly over the bread and gently press it down with a fork until the bread soaks it up.
  • Cut the cherries into quarters and distribute them evenly on top of the bread.
  • Bake for about 1 hour or until it's set. It shouldn't jiggle when you take it out of the oven.
  • Let it cool for about 1 hour before serving.

Notes

  • Dry, old bread works best for the perfect texture.
  • Customize with your favourite spices, like nutmeg, vanilla, or cinnamon.
  • Avoid putting too much in the baking dish for even baking.
