- 1 Bag Yellow Hominy Corn (16 oz. )
- 2 quarts Tap Water
- 1 can Sweetened Condensed Milk
- 3 Cinnamon Sticks
- 1 can Coconut Milk
- 4 Cinnamon Leaves (bay leaves)
- 1 tbsp Nutmeg (grated)
- 2 tbsp Vanilla Extract
- 1 cup All-Purpose Flour
- 2 tsp Almond Extract
- ½ cup Brown Sugar
- 2 tsp Salt
Boil 2 quarts of water with Goya hominy corn.
Cook for 40 minutes until kernels soften.
Add coconut milk, cinnamon, bay leaves, salt, and sugar. Cook for 10 minutes.
For thickener, mix 1 cup flour with 1 cup water.
Gradually blend into the corn mixture, avoiding lumps. Cook over medium heat.
Sweeten with sweetened condensed milk. Adjust to taste.
Add nutmeg, vanilla, and almond extract. Rest 5-10 minutes before serving.
- Soak the hominy corn: Soaking it overnight reduces cooking time.
- Add some spice: Try a bit of nutmeg or cinnamon for extra flavour.
- Sweeten as you like: Adjust the sweetness with condensed milk, sugar, or your favourite sweetener.
