Ingredients
  

  • Avocado (diced)
  • 1 head  Romaine lettuce (chopped)
  • 1 cup  Cherry tomatoes (halved)
  • 1/4 cup  Tortilla strips
  • 1/4 cup Lime juice
  • 1 cup corn kernels
  • 1 cup  Black beans (rinsed and drained)
  • 1/4 cup Cilantro (chopped)
  • 1/4 cup Red onion (thinly sliced)
  • 1/4 cup  Cotija cheese (crumbled)
  • 2 tbsp Olive oil
  • Salt and pepper (to taste)

Instructions
 

  • Combine lettuce, tomatoes, corn, beans, avocado, cilantro, onion, cheese, and tortilla strips.
  • In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  • Drizzle dressing over the salad and toss until well-coated.
