  • 6 Cups Yellow Squash
  • 1 Cup Onion
  • 4 Tbsp Butter
  • 2 Cups Sharp Cheddar Cheese
  • 1 Cup Sour Cream
  • 1 Sleeve Ritz Crackers
  • 2 Large Eggs

  • Preheat your oven to 350 degrees now. Grease your baking dish with some butter. This keeps the food from sticking later.
  • Wash and slice your yellow squash carefully. Chop the onion into small even pieces. Keep the sizes the same for cooking.
  • Melt butter in a large skillet first. Add the squash and onions to the pan. Sauté them until they are very tender.
  • Drain the vegetables in a large colander. Press down to remove any extra water. This ensures the casserole stays nice and thick.
  • Whisk the eggs and sour cream together. Stir in the cheese and the squash. Mix everything until it is well combined.
  • Pour the mixture into your prepared dish. Spread it out evenly with a spoon. Make sure the cheese is everywhere.
  • Crush the crackers and mix with butter. Sprinkle the crumbs over the top now. Cover the whole surface for a crust.
