Equipment

  • Large mixing bowl
  • Electric hand mixer
  • Measuring cups
  • Measuring spoons
  • Rubber spatula
  • Parchment paperĀ
  • Baking sheets

Ingredients

  • 3 Large Eggs
  • 1 Cup Creamy Peanut Butter
  • 1 Cup Granulated Sugar
  • 1 Cup Brown Sugar
  • 1/2 Cup Unsalted Butter
  • 1 Tsp Vanilla Extract
  • 2 Tsp Baking Soda
  • 4.5 Cups Quick Cooking Oats
  • 1 Cup Candy Coated Chocolates
  • 1 Cup Chocolate Chips

Instructions

  • Prep Your Kitchen. Heat your oven to 350 degrees Fahrenheit. Line your pans with parchment paper now. This makes cleanup very easy later. Get all your ingredients on the counter. This helps you stay organized while mixing.
  • Mix the Wet Parts. Put butter and peanut butter in a bowl. Add both types of sugar in now. Beat them until they look very fluffy. This takes about three minutes of mixing.
  • Add Eggs and Vanilla. Crack your eggs into the sweet mixture. Pour in the vanilla extract slowly now. Mix again until the yellow disappears quickly. Do not overmix the dough at this step.
  • Stir in Dry Goods. Add the baking soda to the bowl. Pour in all of your quick oats. Stir them with a large spoon carefully. The dough will become very thick now.
  • Fold in the Treats. Add the chocolate chips and candy pieces. Fold them in with your rubber spatula. Make sure the candy is spread evenly. This ensures every cookie has chocolate inside.
  • Scoop the Dough. Use an ice cream scoop for balls. Place them on the baking sheet now. Leave two inches of space between them. This prevents the cookies from touching each other.
  • Bake to Perfection. Put the pans in the hot oven. Bake them for twelve minutes exactly now. The edges should look slightly golden brown. They will still look soft in the middle.
  • Cool the Cookies. Let them sit on the pan first. Wait about five minutes for them to firm. Move them to a wire rack later. This keeps the bottoms from getting soggy.

Notes

  • Use room temperature eggs for a smoother dough.
  • Do not overbake these cookies in the oven.
  • Measure your oats with a light touch always.
  • Use a scoop for even sized cookie balls.
  • Press extra candy on top before baking them.
  • Wait for the cookies to cool completely first.
  • Always use fresh baking soda for best rise.
  • Try mixing dark and milk chocolate chips together.
