Equipment

  • Roasting pan
  • Meat thermometer
  • Sharp knife
  • Small bowl
  • Cutting board

Ingredients

  • 1 7-pound Standing Rib Roast
  • 2 Tbsp House Seasoning Salt, Pepper, Garlic
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Onion Powder
  • 1 Tsp Dried Rosemary

Instructions

  • Take the meat out of the fridge early. Let it sit for one full hour. This helps the meat cook very evenly.
  • Preheat your oven to 450 degrees now. A hot oven creates a beautiful brown crust. Mix your dry spices in a small bowl.
  • Rub the spice mix all over the roast. Cover the top, bottom, and all the sides. Press the spices into the meat firmly.
  • Place the roast in the heavy roasting pan. Keep the fat side facing up today. This lets the fat melt into the meat.
  • Slide the pan into the hot oven carefully. Roast it at high heat for 30 minutes. This sears the outside of the beef perfectly.
  • Lower the oven heat to 325 degrees now. Do not open the oven door at all. This keeps the heat steady and even inside.
  • Cook until the thermometer hits 135 degrees. This gives you a perfect medium-rare center. Pull the pan out of the oven slowly.
  • Let the meat rest for 20 minutes. Cover it loosely with a piece of foil. This keeps the juices inside the meat.

Notes

  • Always let the meat rest before you slice it.
  • Use a digital thermometer for the most accurate results.
  • Buy a roast with three or four bones.
  • Do not trim away all of the white fat.
  • Keep the oven door closed during the cooking time.
