Ingredients
  

  • 1 pound lean ground beef.
  • 3 cups diced potatoes.
  • 2 cups shredded cheddar cheese.
  • 4 cups chicken broth.
  • 1/2 cup chopped onion.
  • 1/2 cup shredded carrots.
  • 1/2 cup diced celery.
  • 1 teaspoon dried basil.
  • 1 teaspoon dried parsley.
  • 3 tablespoons butter.
  • 1/4 cup all-purpose flour.
  • 1.5 cups whole milk.
  • Salt and pepper to taste.

Instructions
 

  • Cook the beef in the large pot. Drain the extra fat. Set the beef aside.
  • Melt 1 tablespoon of butter. Add onion, carrots, and celery. Cook until they are soft.
  • Stir in the basil and parsley. Add the diced potatoes and broth. Bring the mix to a boil.
  • Lower the heat. Cover the pot. Cook for 10 to 12 minutes. Potatoes should be tender.
  • Melt remaining butter in a small pan. Whisk in the flour. Add milk slowly. Stir until thick.
  • Pour the milk mix into the soup. Add the cooked beef. Stir in the cheese until melted.

Notes

  • Use Russet potatoes for the best texture.
  • Shred your own cheese for better melting.
  • Add cooked bacon on top for crunch.
  • Do not boil after adding the cheese.
  • Cut veggies into very small pieces.
