Ingredients

  • 12 ounces wide egg noodles.
  • 2 cups cooked ham diced small.
  • 1 cup frozen green peas.
  • 2 cups shredded sharp cheddar cheese.
  • 1/2 cup sour cream.
  • 1 can 10.5 oz cream of mushroom soup.
  • 1/2 cup whole milk.
  • 1/2 teaspoon onion powder.
  • 1 cup crushed Ritz crackers.
  • 2 tablespoons melted unsalted butter.
  • 1/2 teaspoon black pepper.

Instructions

Boil the Noodles

  • Bring a large pot of salted water to boil. Add the egg noodles and cook for 7 minutes. They should be firm but cooked through.

Drain the Water

  • Pour the noodles into a colander in the sink. Drain all the water out very well. Let them sit while you prep the sauce.

Make the Sauce

  • In a large bowl, whisk the soup and milk. Add the sour cream and the onion powder. Stir until the mixture is very smooth.

Add the Ham

  • Stir the diced ham into the creamy sauce. Add the frozen peas and half the cheese. Mix everything so it is well coated.

Combine with Noodles

  • Add the cooked egg noodles to the large bowl. Toss them gently so the noodles do not break. Ensure the sauce covers every single noodle.

Fill the Dish

  • Grease your baking dish with butter or spray. Pour the noodle mixture into the prepared dish. Spread it out so it is nice and even.

Add the Topping

  • Mix the crushed crackers with the melted butter. Sprinkle the remaining cheese over the top first. Then, add the buttery cracker crumbs.

Bake Until Bubbly

  • Put the dish in a 350°F oven. Bake for 25 to 30 minutes. The edges should be bubbly and very golden.

Notes

  • Use wide egg noodles for the best texture.
  • Do not overcook the noodles in the boiling water.
  • Use sharp cheddar cheese for a much stronger flavor.
  • Add a little Dijon mustard for a tangy kick.
  • Make sure your ham is cut into small cubes.
  • Use Ritz crackers for the most buttery topping.
  • Add fresh broccoli instead of peas if you prefer.
  • Let the casserole sit for five minutes before serving.
  • Cover with foil if the top browns too fast.
  • Use heavy cream instead of milk for extra richness.
