Ingredients
  

  • Prepared pie crust (fitted into a 9-inch pie plate)

For The Cream Cheese Layer:

  • 8 ounces  Cream cheese (at room temperature)
  • 1/2 cup  Confectioners' sugar 
  • 1 Large egg (at room temperature)
  • Large egg yolk (at room temperature)
  • 1/2 teaspoon  Pure vanilla extract

For The Red Velvet Layer:

  • 1 cup  All-purpose flour
  • 2 tablespoons Cocoa powder
  • 1/2 teaspoon Fine sea salt
  • 6 tablespoons Unsalted butter (at room temperature) 
  • 3/4 cup  Granulated sugar
  • 1 Large egg (at room temperature)
  • Large egg white (at room temperature)
  • 1 teaspoon  Pure vanilla extract
  • 1 tablespoon  Red food coloring
  • Whipped cream (for serving) 

Instructions
 

  • Preheat the oven to 350°F.
  • Place pie crust on the parchment-lined sheet, and chill.

Prepare cream cheese layer:

  • Blend cream cheese and sugar until smooth.
  • Add egg, yolk, vanilla; mix well.
  • Fill the crust, and chill in the freezer.

Prepare red velvet layer:

  • Mix flour, cocoa, and salt in a bowl.
  • Blend butter, and sugar until fluffy.
  • Add eggs, vanilla, food colouring; mix.
  • Combine with dry ingredients; spread over cream cheese.
  • Bake until golden, filling springs back (40-45 mins).
  • Cool before slicing. Serve with whipped cream if desired.

Notes

  • Use room-temperature ingredients for a smooth filling.
  • Gradually add food colouring until you achieve that perfect red.
  • Don't skip the whipped cream topping; it's the icing on the cake, or in this case, the pie.
