Prepared pie crust (fitted into a 9-inch pie plate)
For The Cream Cheese Layer:

Cream cheese (at room temperature)

Confectioners' sugar

Large egg yolk (at room temperature)

Pure vanilla extract
For The Red Velvet Layer:

All-purpose flour

Cocoa powder

Fine sea salt

Unsalted butter (at room temperature)

Granulated sugar

Large egg (at room temperature)

Large egg white (at room temperature)

Pure vanilla extract

Red food coloring
Whipped cream (for serving)
Instructions
Preheat the oven to 350°F.
Place pie crust on the parchment-lined sheet, and chill.
Prepare cream cheese layer:
Blend cream cheese and sugar until smooth.
Add egg, yolk, vanilla; mix well.
Fill the crust, and chill in the freezer.
Prepare red velvet layer:
Mix flour, cocoa, and salt in a bowl.
Blend butter, and sugar until fluffy.
Add eggs, vanilla, food colouring; mix.
Combine with dry ingredients; spread over cream cheese.
Bake until golden, filling springs back (40-45 mins).
Cool before slicing. Serve with whipped cream if desired.
Notes
Use room-temperature ingredients for a smooth filling.
Gradually add food colouring until you achieve that perfect red.
Don't skip the whipped cream topping; it's the icing on the cake, or in this case, the pie.
