Ingredients
  

For The Sauce

  • Tomatoes (chopped)
  • Red capsicums (chopped)
  • Small red chillies
  • 100 ml  Cooking oil
  • 1 Onion (finely chopped)
  • Golden shallots (finely chopped)
  • Spring onions (finely chopped)
  • Celery stalk (chopped)
  • 1 handful Fresh efiri (African mint) (optional)
  • 1 pinch Salt

For The Fish And Rice

  • 1 kg  Firm fish fillets  (cut into large cubes)
  • 25 Chilli flakes mixed with 1 tsp salt flakes
  • tablespoon Cooking oil 
  • Carrots (chopped)
  • Red capsicum (chopped)
  • Green capsicum (chopped)
  • Tomatoes (chopped)
  • Zucchini (chopped)
  • 1 pinch Salt
  • 250 ml Water (1 cup)
  • 2 cups   Parboiled long-grain rice 
  • Fried plaintain chips (to serve)

Instructions
 

  • Let's Start with the obe ata! Blend tomatoes, then capsicum and chilli. Set aside.
  • Heat oil in a big pot. Add onion, shallot, and spices. Sauté till soft.
  • Mix in tomato and capsicum-chilli blend. Cook for 10 minutes.
  • For the fish and rice, spice up the fish. Heat oil, add veggies, and cook.
  • Add fish, water, rice, and obe ata sauce. Simmer for 45 minutes. Enjoy!

Notes

  • Rinse the rice well to make it fluffy.
  • Use fresh tomatoes or tomato paste for a tasty flavour.
  • Take your time with cooking; let the rice soak up the flavours.
  • Get creative with the meat – it's all about what you like.
