Steps Involved In Making Tapioca Noodles
- Combine tapioca flour and tang meen fun. Add salt, and mix well.
- Stir in boiling water and fat. Knead into a smooth dough.
- Roll dough into a 20-21 cm long roll. Cut into 3cm pieces.
- Cover with a clean tea towel. Lightly roll 1 piece into an 8x10cm rectangle.
- Dust with tapioca flour. Adjust the noodle machine for strands. Repeat.
- No noodle machine? Cut 1/2 cm strips with a knife.
- Boil water, add 2 tbsp oil. Cook noodles for 1 minute.
- Drain, soak in cold water for 1-2 mins. Remove and cook.
